What each ingredient does

Spanish or portugal onions
Provide the bulk and soft body of the sauce as they cook down and mash.
Red port
Adds depth, colour and a rich, fruity sweetness to the sauce.
Powdered loaf sugar
Adds sweetness that balances the acidity of the lemon and the wine.
Lemon juice
Adds acidity that brightens the sauce and cuts its richness.
Thickened gravy or coulis
Supplies the liquid base and body that the onions are simmered in.

The step that matters

Boil until the onions are tender. Onions must be fully softened for the sauce to mash smooth. Boiling too briskly can reduce the liquid too fast and scorch the bottom of the pot, so keep a gentle, steady simmer.

Fit is the average pairing score against onion, sugar, pepper, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
