Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dish

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry to ½ inch thick and line the bottom of a deep dish.

  3. Form a forcemeat around the sides of the dish.

Fill and bake

  1. Layer the sweetbreads, artichoke bottoms, cock's combs, truffles, morels, asparagus tops, mushrooms, egg yolks, and forcemeat balls in the dish.

  2. Season with pepper and coarse sea salt.

  3. Almost fill the pie with water, cover it, and bake for 2 hours.

Finish with gravy

  1. After baking, pour in rich veal gravy thickened with a little cream and flour.

What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the main body of the filling.
Puff pastry
Forms a flaky, crisp crust that holds the filling in the dish.
Hard-boiled egg yolks
Add a creamy, crumbly richness to the filling.
Forcemeat balls
Add a savoury, dense meat element that contrasts with the tender sweetbreads.
Rich veal gravy
Adds moisture and savoury depth to the filling after baking.
Cream
Enriches the gravy and gives it a smoother, thicker body.
