Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Warm the milk and water with the butter, sugar, and salt.

  2. Knead the mixture to a proper consistency.

  3. Cover with a linen and flannel cloth and let it rise by the fire for 45 minutes.

  4. Knead again and shape the dough into loaves, bricks, or rolls.

  5. Place on tin plates and let rise for 20 minutes.

  6. Bake in a 400°F (200°C) oven until done.

  7. Serve hot.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
