Sweetbreads

Ingredients

Directions

  1. Do not add water or gravy to the stewpan.

  2. Place veal and bacon over the sweetbreads and season.

  3. Cover tightly and cook with heat from above and below.

  4. Once cooked, remove the sweetbreads.

  5. Add a ladleful of gravy to the pan, boil, and strain it.

  6. Skim off the fat and boil until it jellies.

  7. Return the sweetbreads to the pan to glaze.

  8. Serve on a dish with essence of ham underneath.

  9. For a rich gravy, add mushrooms, truffles, morels, white wine, and ketchup.

  10. Garnish with forced cockscombs stewed in gravy.
