A Goose Pie

Ingredients

Directions

  1. Prepare the pie crust using the flour to create walls for the pie.

  2. Bone the goose and the fowl, and boil the pickled tongue until tender enough to peel.

  3. Cut off the root of the tongue and season the goose and fowl with mace, pepper, and salt.

  4. Layer the fowl inside the goose, place the tongue in the fowl, and keep the goose in its whole form.

  5. Top with butter and cover with the pie lid.

  6. Serve hot or cold; it keeps well and makes a lovely side dish.
