What each ingredient does

Giblets
Provide the main meat and body of the dish as they stew in the sauce.
Flour
Thickens the cooking liquid into a sauce when warmed with the butter.
Egg yolks
Enrich and thicken the sauce as they set gently with heat.
Mushrooms
Add earthy flavour and moisture to the stewed sauce.
Butter
Carries flavour and forms a roux base with the flour.

The step that matters

Stir in the egg yolks and simmer without boiling. Egg yolks begin to thicken around 65 to 70°C and curdle if they boil, which turns the smooth sauce grainy. Keep the heat low and stir constantly.
