To S-sbp Gooseberries
Ingredients
Directions
Gather gooseberries before they become too large, taking care not to cut them off the stalks and buds.
Fill wide-mouth bottles with the gooseberries and cork them loosely.
Place the bottles upright in a boiler filled with water.
When the fruit looks scalded, remove the bottles and let them cool completely.
Seal the bottles tightly and cover the tops with rosin.
Dig a trench in a less-used part of the garden deep enough for the bottles to stand, covering them with a foot and a half of earth.
To prevent the ground from hardening, add fresh litter from the stable.
Alternatively, scald the gooseberries, then fill the bottles with cold water and cork them, storing in a damp or dry place.
