Giblet Pie

Why it works: Onion and potato are a kitchen classic. They rank in the top 3% of all ingredient pairs, and 9,023 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the giblets

  1. Clean the giblets thoroughly.

  2. Stew the giblets with water, onion, black pepper, and sweet herbs until nearly done.

  3. Let the mixture cool.

Assemble and bake

  1. If needed, layer steaks at the bottom of the pie dish.

  2. Add the liquor from the stew to the dish.

  3. Bake the pie in a slow oven at 300°F (150°C).

Finish and serve

  1. Once baked, pour in the cream and add sliced potatoes.

  2. Serve warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose or duck giblets
Provide the main savoury, meaty flavour of the filling through slow stewing.
Beef, veal, or mutton steaks
Add meaty bulk and chewy, savoury texture beneath the filling.
Liquor from the stew
Supplies concentrated savoury flavour and moisture to the pie.
1 cup cream
Adds richness and a smooth, moist texture to the finished pie.
Sliced potatoes
Add starchy bulk and a soft, tender layer that absorbs the flavourful liquid.
1 onion
Becomes sweet and aromatic as it stews, deepening the broth's flavour.

The step that matters

Stew until nearly done. The giblets and steaks keep cooking in the oven, so stopping the stew short of fully tender prevents the meat from drying out and turning tough.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (pepper, beef, cream, potato):

  1. Onionthe original
  2. Spinachabout as good a flavor fit

Fit is the average pairing score against pepper, beef, cream, potato. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
