Baked Fillets of Turbot

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove skin and bones from the cold turbot and cut it into square pieces.

  2. Brush the pieces with egg and sprinkle with bread crumbs mixed with minced parsley and seasoning.

  3. Place the fillets in a baking dish and add enough butter to baste them.

  4. Bake at 350°F (175°C) for 1 hour, keeping the fillets well moistened with butter.

  5. Mix lemon juice and grated nutmeg into the cold lobster sauce, heat it, and pour over the drained fish.

  6. Garnish with parsley and cut lemon.
