Prepare the juice

  1. Remove any moldy or bad currants.

  2. Bruise the currants and mix with water.

  3. After 24 hours, strain the mixture.

Add sugar and ferment

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Currants
Supply the fruit flavor, acidity and the base of the wine.
Sugar
Feeds the yeast during fermentation, producing alcohol and sweetness.

The step that matters

Skim off the scum after 3-4 days. Scum on the surface is made up of pulp, yeast and mold that can spoil the flavor of the wine if left in the mixture, so removing it keeps the brew clean.

Swap the white currant

How well each one fits the dish's main ingredients (currant, sugar):

  1. Raisinfits better
  2. Red currantfits better
  3. Vanillafits about as well
  4. White currantthe original

Fit is the average pairing score against currant, sugar. Candidates are from the same food group and used in at least 100 recipes.
