Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

Brine and yellow

  1. Select the freshest small cucumbers and place them in a narrow earthen pot with a strong saltwater solution.

  2. Cover the cucumbers with cabbage leaves and tie them down with paper.

  3. Let the cucumbers sit in a warm place until they turn yellow.

Green and soak

  1. Remove the cucumbers, wash them, and place them in a pot with fresh water and a little salt to green them.

  2. Cover the pot with cabbage leaves and tightly cover it. Do not let the cucumbers boil.

  3. If they are not a clear green, change the water while keeping them covered until the new water is hot.

  4. Once they are a good green, remove the pot from heat. Let the cucumbers cool in the water.

  5. For larger cucumbers, cut them and remove the seeds. Soak the cut cucumbers in water for 2–3 days, changing the water twice daily to remove saltiness.

Make the syrup and pickle

  1. Make a syrup with 2 pounds of lump sugar and 1 pint of water, adding lemon peel and bruised ginger.

  2. Once the syrup is cold, add the cucumbers to it.

  3. Boil the syrup every 2–3 days for 3 weeks.

What each ingredient does

Small cucumbers
Provide the main body of the pickle, which firms and takes on flavor as it cures.
Strong salt
Draws water out of the cucumbers and removes bitterness during the brine stage.
Lump sugar
Forms the sweet syrup that preserves the cucumbers and sweetens the finished pickle.
Lemon peel
Adds aromatic citrus oil and a bright, slightly sharp note to the syrup.
Ginger
Adds warm, aromatic spice to the syrup as it steeps with the cucumbers.

The step that matters

Changing the greening water without boiling. Holding the cucumbers just below a boil keeps them firm and green, since higher heat softens the flesh and turns the chlorophyll olive-brown.

Swap the cabbage

How well each one fits the dish's main ingredients (cucumber, sugar, lemon, ginger):

  1. Broccolifits better
  2. Radishfits better
  3. Arrowrootfits better
  4. Cabbagethe original

Fit is the average pairing score against cucumber, sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
