Frying Fish

Ingredients

Directions

  1. Wash and dry the fish with a clean soft cloth.

  2. Wet the fish with ale or milk, or beat the egg and spread it over the fish.

  3. Sprinkle flour and then finely grated bread crumbs over the fish.

  4. Heat plenty of clarified dripping or lard in a frying pan until it boils and starts to smoke.

  5. Fry the fish for about 5 minutes until brown on one side, then carefully turn it and fry for another 4-5 minutes until done.

  6. Remove the fish and place it on a drainer, turning it on a soft cloth to dry the fat.
