Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Frying Fish

Ingredients

Directions

  1. Cut the fish into 1-inch thick slices.

  2. Dredge the slices in flour or coat with egg and bread crumbs.

  3. Fry the fish in hot fat for about 15 minutes, turning to cook both sides.

  4. For whiting, skin the fish, skewer the tails into their mouths, dry, flour, and coat with egg and crumbs before frying for 5 minutes.

  5. Drain the fried fish on a cloth and serve garnished with fried parsley.
