Neck of Mutton

Ingredients

Directions

  1. Dress the neck of mutton slowly for about an hour.

  2. Prepare vegetables as desired.

  3. Baste the mutton well when first laid down and every 10 to 15 minutes thereafter.

  4. Skewer a piece of well-greased writing paper over the mutton to keep in the juices.

  5. After half an hour, turn the mutton so that the top and bottom become the sides.

  6. Dredge the mutton lightly with flour after one hour, again when turning, and once more half an hour before it is done.

  7. Add a little coarse sea salt just before serving.
