What each ingredient does

White bread crumbs
Soak up the milk and thicken the sauce as they swell and break down.
Milk
Forms the liquid base that the bread crumbs absorb and cook into a thick sauce.
Onion
Infused with cloves and mace to flavour the milk while it simmers.
Cream or melted butter
Adds richness and a smooth, silky mouthfeel at the end.

The step that matters

Simmer until thick. Bread crumbs thicken the milk gradually as they swell and starch releases. Stirring after the boil and simmering gently prevents scorching on the base and lumps, and the sauce thickens further as it cools.
