Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Coat the birds with egg yolk and sprinkle with bread crumbs.

  3. Hang the birds and baste with butter while roasting for 10 to 15 minutes.

  4. In a clean pan, toast some bread crumbs in a little butter until light brown.

  5. Once the birds are ready, place the toasted crumbs on a hot dish and lay the birds on top.

  6. Garnish with slices of lemon and serve.
