  1. In a stew pan, melt 2 ounces of butter and brown the sliced onions.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main body and rich, savory flavor of the soup.
Butter
Browns the onions for flavor and, later, forms the base of the thickening paste.
Flour or fine oatmeal
Combines with melted butter to form a roux that thickens the strained soup.
Onions
Browning in butter builds sweet, savory depth in the soup.

The step that matters

Adding the strained soup to the roux. Adding liquid gradually while stirring keeps the flour or oatmeal smooth, so lumps do not form and the soup thickens evenly.

Swap the onion

How well each one fits the dish's main ingredients (butter, bread, lemon, thyme, winter savory, parsley, allspice):

  1. Shallotfits better
  2. Leekfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against butter, bread, lemon, thyme, winter savory, parsley, allspice. Candidates are from the same food group and used in at least 100 recipes.
