Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or mutton
Provides the meat that forms the body of the hash.
Gravy from the joint
Adds moisture and savoury meat flavour to the sliced meat.
Bones
Release gelatin and flavour into the water during long gentle boiling.

The step that matters

Boiling the bones gently for at least 2 hours. A gentle simmer extracts gelatin and flavour from the bones without making the liquid cloudy or greasy. Vigorous boiling emulsifies fat into the stock and makes it harder to clarify.

Swap the onion

How well each one fits the dish's main ingredients (beef, meat, pepper):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Tomatofits about as well
