Potted Beef

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Cure the beef

  1. Rub the beef with saltpetre and coarse sea salt, and let it sit for 2 days, basting daily with the brine.

Bake and strain

  1. Place the beef in an earthenware jar with all skin and gristle, add water, and seal the jar with stiff paste.

  2. Bake in a slow oven at 300°F (150°C) for 4 hours.

  3. Pour off the gravy and save it for sauces.

Pot the meat

  1. Remove the skin and gristle, cut the meat small, and beat it in a mortar, adding gravy, butter, and spices to season.

  2. For storage, pack the mixture into small pots or cans, press down, and cover with clarified butter, tying with damp bladder.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Forms the main body of the potted meat, becoming tender during slow baking.
Saltpetre
Gives the cured meat its pink colour and helps preserve it.
Coarse sea salt
Draws out moisture and seasons the beef during curing, aiding preservation.
Fresh butter
Adds richness and a smooth, spreadable texture to the beaten meat.
Clarified butter
Forms a sealed layer over the potted meat that excludes air and helps keep it.

The step that matters

Sealing the jar with stiff paste. The paste must be airtight so steam stays inside during the long slow bake, keeping the beef moist and tender rather than dry.

Swap the allspice

How well each one fits the dish's main ingredients (beef, butter, clove, pepper):

  1. Cinnamonfits about as well
