Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter rolled in flour
Flour coating helps thicken the sauce as the butter melts into the cream and milk.
Cream
Adds richness and body, giving the sauce a smooth, silky texture.
Milk
Forms the liquid base that the lemon peel and mace flavour as it simmers.
Lemon juice
Adds acidity that brightens the rich dairy flavour.

The step that matters

Adding the lemon juice. Cream and milk can curdle when acid is added to hot dairy. Straining the juice and stirring gently while it goes in helps keep the sauce smooth.
