What each ingredient does

Young asparagus
Forms the body of the sauce and supplies its green flavour and fibre.
Thickened veal gravy
Provides savoury body and moisture that carries the asparagus purée.
Egg yolks
Enrich the sauce and thicken it gently when warmed, giving a smooth texture.
Melted butter
Adds fat for richness and a silky mouthfeel in the alternative version.

The step that matters

Serve immediately to avoid discoloration.. Asparagus contains pigments that dull and brown when exposed to air and heat over time, so the sauce loses its bright green colour if held. Serving straight away keeps it fresh-looking.

Swap the white pepper

How well each one fits the dish's main ingredients (asparagus, veal, egg, butter, lemon):

  1. Tarragonfits better
