What each ingredient does

Young cucumbers
Form the bulk of the sauce, providing its body and fresh, mild flavour once sieved.
Béchamel or thick white sauce
Gives the sauce its thick, smooth body and creamy texture.

The step that matters

Mix without boiling again. Once the cucumbers are sieved and combined with the béchamel, reboiling can cause the starch-thickened sauce to break, turn thin, or look grainy. Keeping it gently warm preserves its smooth texture.
