Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Add sweetness and body, helping the chopped fruit bind into a thick mass.
Crabs or other hard acid fruit
Provide acidity that gives the sauce its sharp, tangy character.
Coarse brown sugar
Adds sweetness and helps thicken the sauce to a cream-like texture.
Powdered ginger
Contributes warm, aromatic flavour to the sauce.
Cayenne pepper
Adds heat and pungency to the sauce.

The step that matters

Beat until perfectly blended. Spices must be fully incorporated and sugar added gradually so the mixture is evenly seasoned and reaches a stable, thick cream consistency rather than separating or staying grainy.
