What each ingredient does

Cold beef or mutton
Supplies the main meat, which is reheated in the thickened liquid.
Bones
Release gelatin and flavour into the stock as they simmer.
Rice flour or arrowroot
Thickens the strained stock so it clings to the meat.
Onion
Adds savoury sweetness and aroma to the stock.
Carrot
Adds subtle sweetness and body to the stock.

The step that matters

Reducing the stock to about ¾ pint. Simmering concentrates the flavour and gelatin from the bones. Reducing too little leaves the stock thin, and reducing too far makes it salty and sticky once thickened.

Swap the clove
