To Boil Asparagus

Ingredients

Directions

Prepare the asparagus

  1. Scrape the stems of the asparagus clean, removing 1 to 2 inches from the green tips.

  2. Place the cleaned asparagus in cold water until ready.

  3. Tie the asparagus in equal-sized bunches and cut the large ends evenly.

Cook and serve

  1. Boil plenty of water and add the asparagus, cooking until tender.

  2. Toast the bread slice on both sides until golden brown, then remove the crust.

  3. Quickly dip the toast in the boiling water, then place the asparagus on top with the tips meeting in the center.

  4. Serve with rich melted butter and optional vinegar.

What each ingredient does

Asparagus
Is the main vegetable, cooked until tender in boiling water.
Bread
Toasted and dipped in boiling water to soften it, then used as a base under the asparagus.
Butter
Adds richness and a creamy, savoury flavour when served melted over the asparagus.

The step that matters

Quickly dip the toast in the boiling water. A brief dip softens the toast without letting it become soggy and falling apart. Dipping too long lets the bread absorb too much water, so it loses its structure under the asparagus.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter, vinegar):

  1. Shallotfits better
  2. Mustardfits better
  3. Capsicumfits better
  4. Asparagusthe original

Fit is the average pairing score against bread, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
