Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 300°F (150°C).

  2. Butter the smallest-sized patty pans and line them with almond paste rolled as thin as possible.

  3. Cut the almond paste close to the edges of the pans and bake slowly until crisp, but not browned.

  4. Remove the tartlets from the pans when two-thirds done and place them upside down on a sheet of paper.

  5. Return them to the oven to finish drying.

  6. Once ready, fill the tartlets with whipped cream or jam.

  7. If using jam, top with a small star or ornament made from the same almond paste.
