Souffles, Omlets, &C

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Blend the potato flour with the milk in a bowl.

  2. Pour boiling cream into the mixture and stir until thickened.

  3. Add salt, melted butter, and sugar rubbed on the citron rind.

  4. Gradually mix in the whisked yolks of the eggs.

Fold and bake

  1. Beat the egg whites until firm and fold them into the mixture gently.

  2. Fill a souffle pan less than half full and place it in a preheated oven at 350°F (175°C).

  3. Close the oven door and do not open it for 15 to 20 minutes.

  4. Bake for 30 to 40 minutes until the souffle is set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked yolks thicken the base, and whipped whites lift the soufflé with trapped air.
Potato flour
Starch thickens the milk and cream mixture so it holds the soufflé's structure.
Heavy cream
Adds richness and moisture, giving the base a soft, smooth texture.
Butter
Adds fat for richness and a tender texture in the base.
Sugar
Adds sweetness and balances the citrus rind flavour.

The step that matters

Folding the beaten egg whites. Egg whites must be beaten until firm but folded in gently, because overmixing deflates the trapped air that makes the soufflé rise.

Swap the orange

How well each one fits the dish's main ingredients (potato, flour, milk, cream, butter, sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
