What each ingredient does

Rhubarb
Provides the tart flavour and the bulk of the jam, and its pectin helps the jam thicken.
Fine powdered sugar
Sweetens the jam and draws out juice from the rhubarb, and helps it set when boiled.

The step that matters

Boil rapidly after the stalks are tender. Sugar and fruit must reach a rolling boil for the mixture to thicken to a jam. Boiling gently or too briefly leaves it runny, while stirring keeps it from scorching on the bottom of the pan.
