What each ingredient does

Barberries
Supply the tart flavour and the fruit that turns translucent as it cooks in the syrup.
Sugar
Sweetens the fruit and preserves it by drawing out water and thickening the syrup.

The step that matters

Boil the barberries until transparent. Heating the fruit in concentrated syrup lets sugar replace water inside the berries, which makes them translucent and helps preserve them. Stopping too early leaves them opaque and less stable, while boiling too long can split the skins and turn the fruit mushy.
