Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the pickle

  1. Combine the mushroom buttons and vinegar in a large pot.

  2. Add the salt, white peppercorns, whole ginger, cayenne pepper, and nutmeg.

  3. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.

  4. Remove from heat and let cool before transferring to sterilized jars.

Store

  1. Seal the jars and store in a cool, dark place.

What each ingredient does

Mushroom buttons
Form the body of the pickle and absorb the flavour of the vinegar and spices.
Pale white wine vinegar
Provides the acidity that preserves the mushrooms and gives the pickle its sharp taste.
White peppercorns
Add a sharp, woody heat that infuses the brine during simmering.
Whole ginger
Adds a warm, aromatic spice that flavours the pickling liquid.

The step that matters

Simmer for 10 minutes. Simmering extracts flavour from the spices into the vinegar and softens the mushrooms so they take up the brine. Boiling too hard or too long can make mushrooms rubbery and cloudy the liquid.
