Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, work the butter into the flour until crumbly.

  3. Mix in the sugar, salt, candied rind, and nutmeg.

  4. Pour in the boiling cream or milk and mix slightly.

  5. Add the egg yolks and one egg white, then mix until well combined.

  6. Dust in the baking soda and mix until incorporated.

Shape and bake

  1. Grease a baking sheet with butter.

  2. Drop spoonfuls of the mixture onto the baking sheet.

  3. Bake in the preheated oven for 15 to 25 minutes, until firm and golden underneath.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the structure that holds the buns together as they bake.
Butter
Adds fat for tenderness and a rich flavor, and is worked into the flour for crumbly texture.
Sugar
Adds sweetness and helps the buns brown in the oven.
Egg yolks
Add richness and fat, and help bind the dough.
Baking soda
Reacts to lift and open the crumb so the buns rise and spread.
Boiling cream or milk
Adds moisture and dairy fat, softening the dough into a spoonable mixture.

The step that matters

Dusting in the baking soda. Baking soda needs to be fully mixed through the batter so it reacts evenly; uneven distribution leaves pockets that rise unevenly or taste bitter.
