Prepare

  1. Rinse the tea kettle and fill it with fresh water from the tap or pump.

  2. If using the first water of the day, let it run for a minute to avoid lead contamination.

Brew

  1. Add 1 teaspoon of loose tea for each person and 1 extra teaspoon for the pot.

  2. Cover the tea with boiling water and let it steep.

What each ingredient does

Loose tea
Provides the flavor, aroma and color of the finished brew as it steeps.
Water
Extracts flavor compounds from the leaves and forms the body of the tea.

The step that matters

Cover the tea with boiling water. Water near boiling extracts flavor from tea leaves efficiently. Cooler water pulls out less flavor and can leave the cup weak, while the pot should be warmed first so it does not chill the brew.
