Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef steak
Provides the main filling, and its fat content adds moisture and richness as it cooks.
Suet paste
Forms a sealed crust that holds the filling and keeps it moist during long boiling.
Onion
Adds savoury aroma and flavour to the meat as it cooks in the pudding.

The step that matters

Boiling until cooked through. The pudding must simmer gently for a long time so the meat becomes tender and the suet paste cooks through. Keeping the basin sealed and the water topped up prevents the pudding from drying out or turning tough.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, parsley):

  1. Carrotfits better
  2. Capsicumfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
