Prunes De Damas Au Sec
Ingredients
Directions
Make a thin syrup by boiling water and sugar, then skim it.
Add the pitted damsons to the syrup and boil once.
Leave the damsons in the syrup overnight.
Prepare a second syrup with refined sugar and just enough water to dampen it; boil until it reaches a candy stage.
Remove the damsons from the first syrup and place them in the second syrup.
Simmer the damsons in the second syrup briefly, then leave them overnight.
Place the damsons on a sieve and dry them in a warm oven, turning them twice a day.
Once dry, layer them in boxes with paper between each layer and store in a cool, dry place.
