To Make Excellent Coffee
Ingredients
Directions
Make the coffee
Fill a coffee pot three parts full with boiling water.
Add coffee one spoonful at a time, stirring well between each addition.
Boil gently while stirring to prevent overflow for about one hour.
Clarify and serve
Remove from heat and add one or two spoonfuls of cold water to help clarify.
Let it settle for about an hour until the liquid is clear.
Pour into another vessel, avoiding the sediment.

What each ingredient does
- Coffee
- Provides the flavor and aroma that define the drink.
- Cold water
- Helps the fine grounds sink so the liquid can be clarified.
The step that matters
Pouring off the clear liquid. Stirring or pouring too early or too hard lifts settled grounds back into the liquid. Letting it rest undisturbed lets the fine particles sink, so the clear top layer can be poured off without sediment.
