Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Starchy base that softens into a tender, floury body as it cooks.
Cream
Adds fat and richness for a smoother, rounder mouthfeel and softer flavour.

The step that matters

Cook the chestnuts until fully tender before adding them to the water. Chestnuts that are still firm stay tough and grainy, because their starch only softens fully with enough time in hot water. Check for tenderness before moving on.

Swap the mace

How well each one fits the dish's main ingredients (chestnut, pepper, cream):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against chestnut, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
