What each ingredient does

Green peas
Give the soup its main body, sweet flavour and bright green colour.
Pea shells
Release starch and flavour into the cooking liquid, forming the base stock.
Lettuces
Add soft texture and a mild, fresh vegetable flavour that thickens the purée.
Cucumbers
Contribute moisture and a cool, fresh flavour to the soup.
Onion
Adds savoury depth when softened slowly in butter before simmering.
Butter
Carries flavour from the onion and adds richness to the soup.

The step that matters

Pressing the soup through a fine sieve. Pressing the cooked solids forces soft pulp through the mesh, giving a smooth texture. Skipping or rushing this step leaves fibrous bits and a grainy soup.

Swap the white pepper

How well each one fits the dish's main ingredients (peas, cucumber, lettuce, onion, butter, parsley, mint):

  1. Tarragonfits better
