A Cheaper Meat Jelly

Ingredients

Directions

Make the jelly

  1. Combine the calf's foot, neck of veal or beef, onion, carrot, parsley, spice, and ham in a pot.

  2. Add 5 half-pints of water and bring to a boil.

  3. Reduce heat and simmer very slowly for 5 to 6 hours.

  4. Strain the mixture to obtain the jelly.

Make the glaze

  1. For a glaze, boil strong, clear gravy or jelly until it thickens to the consistency of thin cream.

  2. Watch and stir constantly to prevent burning.

  3. When it jellies from the spoon, pour it out immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's foot
Releases gelatin during long simmering, which sets the broth into a firm jelly when cooled.
Neck of veal or beef
Provides meat and connective tissue that adds body and savory flavor to the broth.
Lean ham
Adds salty, savory flavor to the stock.

The step that matters

Thickening the glaze. Boiling strong jelly or gravy can scorch quickly as it reduces and concentrates sugars and proteins. Constant stirring and watching prevent burning, and removing it at the right moment, when it coats a spoon and jellies, keeps it from becoming too stiff.

Swap the onion

How well each one fits the dish's main ingredients (veal, carrot, parsley, ham):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against veal, carrot, parsley, ham. Candidates are from the same food group and used in at least 100 recipes.
