What each ingredient does

Beef
Provides the meat that becomes tender and rich during long, gentle simmering.
Coarse sea salt
Draws moisture out of the beef and helps preserve and season the meat during curing.
Brown sugar
Adds sweetness and balances the sharp spices while helping the cure develop flavor.
Beef broth
Supplies liquid that gently cooks the beef and forms the base of the stew.
Carrots
Add natural sweetness and body to the broth as they simmer.

The step that matters

Simmer gently for 4½ hours. A rolling boil toughens meat fibers and makes the broth cloudy, while slow, gentle simmering breaks down connective tissue so the beef turns tender.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, clove, nutmeg, sugar, onion, thyme):
