A Common Hash of Cold Beef Ob Mutton

Ingredients

Directions

Prepare the stock

  1. Remove the meat from the bones, slice it small, and trim off the brown edges.

  2. Stew the trimmings with the broken bones, onion, thyme, parsley, carrot, peppercorns, cloves, salt, and water.

  3. Reduce the mixture to just over ¾ pint, then strain and remove the fat.

Finish and heat

  1. Thicken the strained liquid with rice flour or arrow-root, adding salt and pepper if needed. Boil the mixture for a few minutes, then add the meat and heat it thoroughly.

What each ingredient does

Cold beef or mutton
Provides the meat that is sliced and reheated in the hash.
Rice flour or arrow-root
Thickens the strained liquid so it clings to the meat instead of running thin.
Bones
Release gelatin and flavor into the water as they stew, giving the liquid body.
Onion
Adds savory sweetness and aroma to the stock as it stews.

The step that matters

Thickening the strained liquid. Starch must be fully dispersed and then boiled for the thickening to set smoothly. Adding flour directly to hot liquid can clump, and undercooked starch leaves a raw, floury taste.

Swap the clove
