Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal Cutlets

Ingredients

Directions

Prepare the cutlets

  1. Trim the veal cutlets into proper shape and beat them with a rolling pin until the fibers are broken.

  2. Flour the cutlets well to prevent gravy escape.

Fry and make the sauce

  1. Fry the cutlets in a pan over medium heat for 12 to 15 minutes until amber brown and cooked through.

  2. Transfer the cutlets to a hot dish.

  3. Pour off excess fat from the pan.

  4. Add butter to the pan and melt it.

  5. Stir in flour until well-colored.

  6. Gradually pour in gravy or boiling water.

  7. Add pepper, salt, and lemon juice.

  8. Bring the sauce to a boil.

Serve

  1. Pour the sauce over the cutlets.

  2. Serve with fried forcemeat balls or garnished with ham or bacon if desired.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the main meat, which becomes tender when its fibers are broken by beating.
Flour
Coats the cutlets and thickens the sauce, helping it cling and browning the surface.
Butter
Adds fat and rich flavor to the pan and the sauce.
Gravy or boiling water
Forms the liquid base of the sauce that is thickened and brought to a boil.
Lemon juice
Adds acidity that brightens the flavor of the rich sauce.

The step that matters

Flouring the cutlets well. Flour coats the surface so the sauce clings to the meat and does not run off, and it helps the cutlets brown in the pan.
