Fricasseed Veal

Ingredients

Directions

Make the fricassée

  1. Melt the butter in a wide stewpan over medium heat until it begins to boil.

  2. Add the veal slices and shake the pan until the veal is firm on both sides, without browning.

  3. Stir in the flour until well mixed with the veal.

  4. Gradually pour in enough boiling veal gravy to almost cover the veal.

  5. Stew gently for 50 to 60 minutes, or longer until the veal is tender.

Finish and serve

  1. Add mace, salt, cream, egg yolks, and lemon juice, following the directions for a blanquette of veal.

  2. Optionally, stew strips of lemon rind in the gravy.

  3. Add mushroom buttons 20 minutes before serving to enhance the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender during slow, gentle stewing.
Butter
Carries flavour and enriches the sauce while the veal is firmed without browning.
Flour
Thickens the gravy so it coats the veal rather than running off.
Egg yolks
Enrich and thicken the finished sauce, giving it a smooth, creamy body.
Cream
Adds richness and a smooth, mellow texture to the sauce.
Mushroom buttons
Add earthy flavour and a tender bite to the finished stew.

The step that matters

Adding the egg yolks and cream. Egg yolks thicken when heated but can curdle if they get too hot or boil. Remove the pan from strong heat and stir steadily so the sauce becomes smooth and glossy rather than grainy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (veal, butter, flour, cream, egg, mace, mushroom):

  1. Lemonthe original
  2. Coconutfits about as well
  3. Figfits less well
  4. Applefits less well

Fit is the average pairing score against veal, butter, flour, cream, egg, mace, mushroom. Candidates are from the same food group and used in at least 100 recipes.
