What each ingredient does

Mutton shoulder
Forms the main meat that becomes tender and moist during long gentle stewing.
Coarse sea salt
Draws moisture out of the meat and seasons it deeply during the multi-day cure.
Sugar
Balances the salt and spices and helps the meat take on a sweet-savoury flavour.
Beef broth
Provides the liquid for slow stewing and gives the gravy its savoury body.
Cloves
Adds warm aromatic spice that penetrates the meat during curing.

The step that matters

Stew it gently for 4 hours. Slow, low-heat stewing lets collagen in the shoulder break down into gelatin, which makes the meat tender. A rapid boil toughens the muscle fibres and can leave the meat dry and stringy.

Swap the mace

How well each one fits the dish's main ingredients (mutton, sugar, clove, pepper, ginger, beef, onion):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against mutton, sugar, clove, pepper, ginger, beef, onion. Candidates are from the same food group and used in at least 100 recipes.
