Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
A Common Indian Currie
Ingredients
Directions
Prepare
Mix curry powder, salt, and flour in a bowl.
Cut the meat into thick cutlets or squares.
Rub half of the spice mixture over the meat.
Fry the onions and meat
Fry the sliced onions (and garlic or shallots if using) in butter until golden brown, then drain the fried onions on a sieve.
Add more butter to the pan and lightly fry the meat, then drain excess fat.
Stew and simmer
Place the meat in a clean saucepan and top it with the fried onions.
Add enough boiling water to almost cover the meat.
Mix the remaining curry powder with a little broth or cold water, and add the mixture to the saucepan after the curry has stewed for a few minutes.
Simmer gently until the meat is tender, about 1.25 to 2.5 hours depending on the type of meat.
Optionally, add an acid apple or vegetables during cooking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Meat
- Provides the protein base that becomes tender through long, gentle simmering.
- Onions
- Browning in butter adds sweetness and deep savory flavor to the sauce.
- Curry powder
- Supplies the spice aroma and color that define the dish's character.
- Flour
- Lightly coats the meat and helps thicken the sauce as it cooks.
- Butter
- Carries fat for frying, adding richness and helping the onions and meat brown.
The step that matters
Frying the curry powder-coated meat and the onions to golden brown. Browning builds the Maillard flavors that give the sauce depth. Pale onions or meat taste flat and raw-spiced, while over-dark onions turn bitter.
Swap the clove
The recipe marks clove as optional. How well each one fits the dish's main ingredients (meat, flour, onion, garlic, shallot, butter, apple):
- Capersfits better
- Thymefits better
- Turmericfits better
- Clovethe original
Fit is the average pairing score against meat, flour, onion, garlic, shallot, butter, apple. Candidates are from the same food group and used in at least 100 recipes.
