Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the main body of the dish and release moisture that becomes part of the sauce as they stew.
Butter
Carries the mushroom flavour and helps the mushrooms brown gently in the pan.
Flour
Lightly browned in the fat, it thickens the liquid into a smooth sauce.
Gravy or beef broth
Forms the savoury liquid that the mushrooms stew in, adding body and meaty flavour.

The step that matters

Shake the pan until the flour is lightly browned. Flour cooked in butter must be stirred or shaken constantly so it toasts evenly without scorching. Browned flour gives a nutty flavour and thickens the sauce better than raw flour would.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour, beef):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, flour, beef. Candidates are from the same food group and used in at least 100 recipes.
