To Boil Carrots

Ingredients

Directions

Prepare

  1. Wash and scrape the carrots lightly, removing any blemishes.

  2. If large, split them across the tops a few inches down.

  3. Rinse the carrots and place them in plenty of boiling salted water.

  4. Boil young carrots for 20–30 minutes; full‑grown ones for 1½–2 hours.

Cut and boil

  1. Cut the upper parts of the carrots into even lengths of about 2.5 inches and trim one end to a point.

  2. Boil the prepared carrots in salted water for 45 minutes.

Finish with broth

  1. Drain the carrots and arrange them upright in a broad saucepan.

  2. Pour in hot beef broth or veal gravy to half their height.

  3. Add salt to taste and 1 teaspoon of sugar.

  4. Boil briskly for 30 minutes or longer if needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the dish's body; as they cook they soften and their natural sugars add sweetness.
Beef broth or veal gravy
Adds savoury flavour and moisture as it simmers around the carrots and reduces slightly.
Sugar
Adds a touch of sweetness that balances the salt and rounds out the savoury broth.

The step that matters

Matching cook time to carrot age. Young carrots soften in 20–30 minutes, while full-grown roots need 1½–2 hours. Their fibre and starch soften slowly, so undercooking leaves them tough and overcooking makes them mushy. Test for tenderness with a knife.

Swap the carrot

How well each one fits the dish's main ingredients (beef, sugar):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Tomatofits about as well
  4. Carrotthe original

Fit is the average pairing score against beef, sugar. Candidates are from the same food group and used in at least 100 recipes.
