Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Trim excess fat from the mutton cutlets and wash them.

  3. Dredge the cutlets lightly with flour and season with salt and pepper or cayenne.

  4. Place the cutlets in a tin mold and add enough broth or water to create gravy.

  5. Stir in the mushroom catsup or Harvey's sauce.

Make the crust and bake

  1. Boil and mash the potatoes with butter and milk or cream until smooth.

  2. Spread the mashed potatoes over the cutlets, leaving the surface a bit rough.

  3. Cover the mold and bake for 45 to 75 minutes, depending on size.

Serve

  1. Serve with a folded napkin around the mold and a hot dish ready for the cover.

What each ingredient does

Mutton cutlets
Provide the meat that cooks slowly and becomes tender under the covered mold.
Potatoes
Form a mashed topping that seals in moisture and browns lightly as it bakes.
Flour
Lightly coats the cutlets, helping the surface brown and the gravy thicken.
Broth or water
Creates the moist gravy that surrounds the meat during baking.
Butter
Adds richness and softness to the mashed potato topping.
Milk or cream
Makes the mashed potatoes smooth and spreadable, adding moisture and richness.

The step that matters

Covering the mold while baking. The lid traps steam so the mutton cooks gently in its own gravy. Without a tight cover the meat can dry out before the long bake is done.
