Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Line a large dish with puff pastry and cover the bottom with the veal cutlet or steak.

  3. Season the meat with salt, cayenne, and nutmeg or mace.

  4. Prepare the pigeons and place them in a single layer in the dish, breasts down.

  5. Stuff each pigeon with a slice or ball of butter seasoned with cayenne and mace.

Assemble and bake

  1. Add the yolks of the hard-boiled eggs between and over the pigeons, and dot with more butter.

  2. Season the entire dish well with salt and spices.

  3. Pour in enough cold water or veal broth to create gravy.

  4. Roll out the pastry cover to ¾ inch thick, secure it around the edge, and decorate it.

  5. Bake for 1 hour or more until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms a crisp, flaky crust that encloses the filling and browns in the oven.
Veal cutlet or rump steak
Provides the meat base and savoury flavour that the juices and gravy build on.
Pigeons
Supply the main meat, which cooks gently in the enclosed dish and stays moist.
Butter
Adds richness and moisture, carrying the seasoning into the pigeons as it melts.
Hard-boiled egg yolks
Enrich the filling with a soft, creamy texture and rich flavour.
Cold water or veal broth
Creates the gravy that keeps the meat moist as the pie bakes.

The step that matters

Securing the pastry cover and baking long enough. Sealing the pastry edge traps steam and juices so the meat cooks in its own moisture. A tight seal and a full bake until golden ensure the meat is tender and the crust is cooked through.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, butter, egg):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, pepper, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
