Quince Blamange, with Almond Cream

Ingredients

Directions

Prepare the almond cream

  1. Blanch and beat the almonds into a smooth paste, adding a few drops of water to prevent oiling.

  2. Pour the boiling quince juice over the almond paste and stir well.

  3. Place the mixture in a strong cloth and twist the ends to extract the almond cream.

Make and mold the blanc-mange

  1. Return the juice to the heat, add the sugar, and bring to a boil.

  2. Stir in the isinglass and simmer for 5 minutes.

  3. Remove any scum, stir the blamange until nearly cold, then mold it for serving.

What each ingredient does

Blanched almonds
Provides rich flavour and fat, giving the set dessert a creamy body.
Boiling quince juice
Forms the liquid base and supplies the fruit flavour of the dish.
Sugar
Adds sweetness and balances the tartness of the quince juice.
Fine isinglass
Acts as a setting agent, firming the liquid as it cools.

The step that matters

Stir until nearly cold, then mold. Isinglass sets as the mixture cools, so it must be molded before it firms. Removing scum first keeps the blancmange clear and smooth.
