Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatine-like protein that sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and body, balancing the tartness of the currant juice.
Clear currant juice
Provides the main fruit flavour, tartness and colour of the jam.
Thick cold cream
Adds fat and richness, giving a softer, creamier texture to the set.

The step that matters

Pour when less than milk-warm. Isinglass sets as it cools, so the mixture must be cool enough to begin setting in the molds. Pouring while very hot can keep it from setting firmly and can make the cold cream separate instead of blending smoothly.

Swap the currant

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Currantthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
